  • 1 tbsp salt
  • Water
  • 8 salted egg yolks
  • 1 cup curry leaves
  • 6 pieces dried red chillies
  • 3 tbsp butter
  • Vegetables (for this recipe, we’ll use 2 Japanese cucumbers, 1 carrot, 2 medium sized potatoes)

  2. Mix water and salt in Jumbo! That’s A Bowl. Add sliced vegetables and soak for 30 minutes.
  3. Heat oil in large saucepan for deep frying. Once oil is hot, add curry leaves and cook till crisp. Leave aside to drain excess oil.
  4. In same saucepan, fry vegetables for about 45 seconds. Remove and drain excess oil on paper towels. Fry vegetables again till golden brown.
  5. Once frying is complete, pour oil out and sauté salted egg yolks in the same pan until soft. Add butter and cook till mixed well.
  6. Remove pan off heat and add fried vegetables and dried red chillies to the yolk mixture. Toss until well coated.
