1. Heat the oven for 10mins at 200ºC.

  2. Chop the garlic and ginger till fine.

  3. Combine all the sauce in a bowl.

  4. Then add the chopped ingredients and mix well.

  5. Cut the potatoes and carrot into 4 pcs.

  6. Add the vegetables in the pot and brush the marinade ingredients and oil over the chicken and leave it for 10 mins.

  7. Roast the chicken for about 45 mins-1 hour at 170ºC with the lid on. Then continue roasting for 10-15mins at 200ºC without the lid. (If chicken is cut into 4 parts, roast about 20-25 mins at 170ºC with the lid on. Then 10-15 mins at 200ºC without the lid.)

  • 1 Whole chicken medium size (can cut into 4 parts)
  • 4 cloves Garlic
  • 1 inch Ginger
  • 3 tbsp Soy sauce
  • 2 tbsp Tomato sauce
  • 1 tbsp Osyter sauce
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 tbsp Oil
  • 2 Russet potatoes
  • 2 Carrots
