Heat the oven for 10mins at 200ºC.
Chop the garlic and ginger till fine.
Combine all the sauce in a bowl.
Then add the chopped ingredients and mix well.
Cut the potatoes and carrot into 4 pcs.
Add the vegetables in the pot and brush the marinade ingredients and oil over the chicken and leave it for 10 mins.
Roast the chicken for about 45 mins-1 hour at 170ºC with the lid on. Then continue roasting for 10-15mins at 200ºC without the lid. (If chicken is cut into 4 parts, roast about 20-25 mins at 170ºC with the lid on. Then 10-15 mins at 200ºC without the lid.)
