Finely chop garlic and shallots. Then, dice ginger into small pieces.
Meanwile, heat oil in Inspire Stock Pot.
Once oil is heated, carefully add in cinnamon sticks, cloves and star anise. Stir and cook until fragrant.
Put chicken in and let cook for about 5 minutes, then pour in 4L of water.
Mix in chopped garlic, shallots as well as ginger, and let cook over slow fire for 1-2 minutes.
Combine powdered soup, kurma and coriander powder with a little water to make a paste.
Pour paste into pot and mix well. Add a little more water if too dry.
Cook for approximately2-3 minutes till spices are cooked. Then, add water and stir.
Let Soto Soup cook for another 15-20 minutes.
Lastly, garnish with fried onion or Chinese parsley for a finishing touch.
