- 1.8 kg onion
- 100 gm red jalapeno
- 100 gm green serrano pepper
- Brine
- 580 ml water
- 290 gm soy sauce
- 105 gm granulated sugar
- 125 gm white vinegar (7% acid)

Thinly slice onion* and cut peppers into bite-sized pieces (do not remove seeds**).

Arrange onions in the Universal Pickling Jar and add chopped peppers on top.

To make brine, bring water, soy sauce, sugar and vinegar to a boil on medium heat. Reduce heat and simmer for 10 min; stir until sugar dissolves.

Allow brine to cool for 5 min., then pour over onions.

Close with Pickling Cover, cool at room temperature and refrigerate for 2-3 days before opening to allow flavors to develop before consuming.

After opening, store vertically in refrigerator and use within 30 days.

**Remove seeds from chili peppers to reduce level of spiciness.
