  • 100 gm red jalapeno
  • 100 gm green serrano pepper
  • Brine
  • 580 ml water
  • 290 gm soy sauce
  • 105 gm granulated sugar
  • 125 gm white vinegar (7% acid)

Instructions

  1. Thinly slice onion* and cut peppers into bite-sized pieces (do not remove seeds**). 

  2. Arrange onions in the Universal Pickling Jar and add chopped peppers on top. 

  3. To make brine, bring water, soy sauce, sugar and vinegar to a boil on medium heat. Reduce heat and simmer for 10 min; stir until sugar dissolves. 

  4. Allow brine to cool for 5 min., then pour over onions. 

  5. Close with Pickling Cover, cool at room temperature and refrigerate for 2-3 days before opening to allow flavors to develop before consuming.

  6. After opening, store vertically in refrigerator and use within 30 days.

TIP:

*Save time and slice onions quickly using MandoChef (Thickness II)

**Remove seeds from chili peppers to reduce level of spiciness.
